Toddler Meals: keeping things simple

Ok... easy meals.. There are days we attempt to make life easy by cracking open a box of Mac & cheese, slap sandwiches together or make our meals from scratch.. Here are some simple options:

Boxed meals

Landon is not picky about much, but he isn't a fan of mashed potatoes or Mac & cheese. I've tried introducing it in 6 different ways, but I think it's the sauce that makes him cranky... It doesn't stop me from trying it over & over again.. 

Mac & cheese, hamburger style is my favorite thing!!! I added mushrooms and onions as well.. He did end up eating it once I added spaghetti sauce, but I mainly served it so he could "try". I ate most of it! Delicious! I always introduce a Variety of sides, cheese, raisins and different fruits.. We will often eat the same type of fruit 2-3x a week.. Since he gets large servings of fruit at least 2-3x a day, I make sure he gets vegetables at least 1x... But when I can, (at least every other morning), I'll make veggie omelets. 



Homemade

this one is a pretty easy one. We usually always have rice on hand.. I also have chicken broth in 6oz boxes. I heat soup with rice & veggies for 30 minutes on low. This is a Great meal on cold days. I serve soup at room temperature and he loves it! 


Baked meals: 

I often use a conventional oven to make easy meals.. Naan bread is amazing because it's ready made.. Making pizza only takes about 10 minutes @ 350•. We use organic spaghetti sauce with mushrooms, meatballs, pepperoni and bell peppers.. We are also practicing "nut eating" with Landon's teeth coming in, we love chopping up nuts so he can practice chewing. We also make sure it's salt less nuts.


Sandwiches
we are not huge sandwich eaters... I actually freeze a loaf of bread once i purchase because it takes us about a few months to finish it. But as an easy meal, I will encourage him to have a sandwiches... He will eat everything before he touches his sandwich.

Christmas Pajama Link-Up Party!

I'm so excited to post about our holiday jammies! I bought these at baby gap in june for $2.99. They're the only pair of footed zip up jammies he owns but they're adorable!

We got this fleece blanket at old navy. Its very warm and he loves snuggling up while we read books!

We also decked out his room in santa bedding from Pottery Barn Kids. He will use it every year for the next few years! SOOOoOoOoOo cute!

It was also the first time we introduced a pillow and he loves it! He now likes us to tuck him in and say, "good night buddy!"

15 Weeks: Our 2nd Baby



How far along? 15 weeks 3 days.. 

Total weight gain/loss: We will see this week.

Maternity clothes? Obsessively wearing my gap maternity leggings. 

Stretch marks? No, started using coconut oil, it keeps me from going dry.

Sleep: no... Makes me want to cry!

Best moment this week: nothing too exciting happened... I'm sure once I see the ultrasound, life will be amazing!

Gender: not sure yet... Hopefully we will find out Friday!

What Landon wore


Taking photos of this busy toddler is becoming quite a challenge!!! Dressing this kid for cold weather isn't has hard as I thought. If he's cold, he will gladly wear a hat. 

I like to mix match pieces for him so we are all over the place when we shop.

Thanksgiving 2013


I hope you all had a wonderful Thanksgiving!! I do apologize for such a late post!!


We had thanksgiving this year at my aunts house. She lives about 2 miles away from me!! Are you looking at this assortment?? From left to right: 1 baked turkey, 1 ham (my contribution), 1 surprisingly delicious fried turkey, then corn bread, corn, green beans, mashed potatoes, Mac & cheese, followed by our usual Vietnamese food buffet. 


Lunner (lunch/dinner) was delicious! 

Here is my ham!!! I didn't realize how easy it was to make ham!! Go to honey baked ham, stand in line for an hour, then to cook, heat for 45 minutes @ 350•. Perfection! 

The perfectly baked turkey! All the decor came from my aunts yard lol.

The set up.. Believe it not.. The table setting was all plastic! Reusable too. 

So cute right?

Afterwards, we dropped my husband off at home to watch the Steeler game, Landon stayed with my parents and my sister ran off to successfully shop at toys r us & old navy. 


I'm so thankful this year for my family, especially my mom who has completed chemo and is starting to recover. Life is much sweeter with her around and we thank god, tho he continues to challenged her, he guides her through and she seems stronger than ever. 

I'm thankful for my husband, who works so hard for our little family, who supports us and I'm thankful that he is so hands on with our son. 

I'm thankful for my siblings, especially my sister who has really been an intricate part of my life since Landon was born. She is full of love and we've completely bonded. She has been my Go To person and when I need a break, she comes running, swoops Landon up for a couple of hours. She also already loves this second baby so much! I will never have to invite her over, she will just call and ask to see my son and I never say no. How could I? 

And I'm thankful for my extended family and friends.

Baby #2 gender predictor

We hope to find out baby's gender next week, I thought if would fun to test out some old wivestales.

I did this with Landon & it came out true so I'm very interested in seeing if we are correct with baby #2! 

We used the same Chinese predictor test on the bump.. It says girl..


We bought an over the counter gender prediction pee test... Girl.



Baby's heartbeat above or below 140... Girl

Morning sickness.. Girl

Cravings.. Sweet or salty.. In conclusive because I don't like anything. Lol

Moody.. Happy or moody.. This week I'm moody so girl.

Skin.. I feel like my skin isn't as pretty as usual.. Girl.

I've had 10 family members predict girl... 1 said boy.. because they wanted me to have more than 2 kids.

I'm totally not leaning towards girl.. I'm happy either way. It's just strange that all the signs leads to girl and my current pregnancy is completely opposite of Landon's. 

We have an ultrasound next Friday, hopefully we find out if baby #2 is a boy or girl!
