Toddler Meals: 12 meals in 4 days


It's been awhile since I've posted toddler meals... So here it is:

Breakfast: (clockwise)

Scrambled eggs with sweet potato and bell peppers

Meals were approved by Landon! 

All these meals are pretty easy to make. They can be repeated and rotated. I try to serve batches of food throughout the week to prevent snacks from going stale (like the trail mix).

Toddler Meals: Glazed steak Rolls

So we love this meal! We serve it once a week or once every other week. I got the recipe on Pinterest.



We just wrap and brush a little butter, soy sauce, salt & pepper. Bake in oven at 350 for 15 minutes. Its SOOOO good.

Toddler Meals: Pinterest Dinners

We've had a few winning meals this month so I thought I'd share!


Baked Alaskan Cod:

Mommy & Daddy Version:
Landon Version:

2 black cod steaks
2 teaspoons melted butter
1/2 cup Gluten free soy sauce
2 cloves garlic, minced
black pepper
Directions:

1. Preheat oven to 350 degrees (if you're going to bake the steaks).

2. Mix together the melted butter, marinade, garlic, and a few dashes of pepper.

3. Pour the mixture over cod steaks in a shallow glass dish, and let marinate for at least 20 minutes.

4.To bake: bake in a casserole or baking dish in the marinade at 350 for about 20-30 minutes or until fish flakes easily.

5.Serve with steamed white rice

Spaghetti Squash w/ Bacon, Garlic Shrimp & Spinach

Since it was our first time making spaghetti squash, we made it with mariana sauce, grilled shrimp and bacon. Its pretty good and I can't wait to try it out with other ingredients!

Toddler Meals: 3 Meals A Day

BREAKFAST

I'm sure you're seeing a trend with eggs, but I basically sauteed any type of vegetables in our fridge and add eggs. he will eat anything with scrambled eggs. With this particular breakfast, we used bell peppers and bacon. Served with a cheese croissant and berries. (he also ate oatmeal, a banana and milk)


LUNCH


I try to keep lunch easy lately!! we love almond butter with jelly, kiwi, cheese and blueberry coconut yogurt.

DINNER

On days we order out, I love ordering sushi. Landon LOVES California rolls. I order miso soup with extra tofu and a side of rice. Sometimes I will bring steamed peas with me and mix it in for extra vegetables but honestly, we eat so much fruit and veggies in a day, I don't worry about 1 meal without veggies. lastly, we can't forget our fruit- strawberries!

for snack- we usually have a smoothie (greens & fruit) with trail mix and fruit.

Toddler Meals: Easiest Daily Meals

BREAKFAST


Another meal I utilized pinterest for.. and I have to say, the french toast rolls have been made almost everyday!! Instead of nutella, I use almond butter. SO SO SO GOOD! 

scrambled eggs are made with spinach. Breakfast is always served with steel cut oats with yogurt and a banana. Also he takes about 6oz of almond milk.


LUNCH
Bolani is a new favorite. We love spinach bolani with hummus or guacamole. Its pretty easy to eat! Served with cheese crackers, string cheese and cut oranges.

DINNER

Dinner doesn't always have to be extravagant. we made home made black bean burrito with guacamole, raisins and cut pears.  Pretty easy, fast and we ate a ton!

Toddler Meals: White Chicken Chili


Alright... I made this a few times.. and IT IS "hands down my favorite meal" says my husband!! its so warm and hearty, perfect for cold weather! Landon LOVES IT! 

I've made a few variations but you can find the real recipe HERE


Here is my version:

Ingredients: 
2 tablespoons of olive oil 
1 medium onion, chopped 
1 tablespoon minced garlic 
1/4 bell peppers, chopped
1 sweet potato
1/2 cups broccoli and cauliflower, chopped  
1 tomato, chopped 
1/2 a cup of uncooked quiona1 lb. cooked chicken breast, cubed 
2 cups chicken broth 
1 can white beans (drained and rinsed)  
1/4 teaspoon salt 
1/8 teaspoon ground black pepper 
Avocado slices and rice to serve 

Directions: 

1. Cook the onions and garlic in hot oil over medium heat until onions are translucent. Incorporate the peppers, tomato, chicken, sweet potato, broccoli/ cauliflower, salt and pepper and cook, stirring constantly, for another 5 minutes. 

2. Add the chicken broth, beans, quiona and cover with a lid for 30 minutes, stirring every 5 to 10 minutes. 

3. Use a potato masher to mash some of the beans and chicken. This will help to thicken the stew and break the chicken into smaller pieces. (I used my hand mixer)

4. Let the stew simmer on low heat for another 20 minutes. Check constantly and add more water or chicken broth, if necessary. 

5. The stew will be ready when everything is soft and the stew has thickened. Serve with avocado slices or with a salad.

Toddler Meals: Glazed Roast Chicken with Sweet Potatoes and Zucchini




Hands down the fastest meal my my family has ever devoured. 



Makes: 3 servings
Prep time: 15 minutes
Cook time: 35 minutes
Ingredients
2 sweet potato and 2 zucchini, peeled and thinly sliced.
2 1/2 tablespoons olive oil
2 garlic cloves, minced
2 tablespoons honey
2 teaspoons cider vinegar
1 1/4 teaspoons salt, plus additional to taste
1/2 teaspoon cinnamon
2 boneless, skinless chicken breasts, rinsed and patted dry
Chopped cilantro, for garnish (optional)
Directions
1. Preheat the oven to 400 degrees. In a medium bowl, toss the sweet potatoes and zucchini in the olive oil and scatter on the bottom of a roasting pan. Roast for 15 minutes.
2. In a small bowl, mix together the garlic, honey, vinegar, salt, and cinnamon to make a paste. Rub the paste evenly over each breast.
3. Place the chicken breasts on top of the sweet potatoes and roast until the chicken is just cooked through, about 25 to 30 minutes. Serve garnished with cilantro if desired.

Toddler Meals: Protein Power


Introducing eggs, meats and dairy to add protein into my guys diet was a lot more complicated than I thought... So I started sneaking it in. If Landon refuses to try something, I will continue to offer it until he gives in.. It usually takes 2 weeks.


Hard boiled eggs was a "new thing". He likes the egg whites but not the egg yoke but I still offer 1 hard boiled egg 2-3x a week. I still always offer stuff he likes: meatballs, almond butter with crackers and cheddar. Cucumbers are new so we offered it a lot the last few weeks. He will take a few bites but he's not too excited about it.

Scrambled eggs is a hit! Adding rice, greens and chicken has helped as well. Yogurt twice a day keeps him regular and he loves expensive organic berries. 

I'm trying really hard to simplify lunches. I started trying to introduce sandwiches 2x a week. He's very "blah" about it. He prefers a bowl of soup or rice... I also add fresh fruit, cheese and trail mix to make sure he gets some variety. 

He eats everything we eat and this meal was particularly devoured in our home.. A bed of thinly sliced sweet potato and zucchini.. Baked 400• for 10 minutes- lay 2 marinated chicken breast on top and bake for 30 minutes... It was so good! He  had 2 servings! Hummus is a great source of protein as well so we add them on crackers. Grapes is always a hit in our house!

Fried rice is so easy to eat! It's healthy too! I use a little coconut oil, frozen veggies, meatballs and cooked rice.. Give it a good stir to warm everything up then crack 1 egg to bind everything. He can eat this everyday... Pears are in season so we serve them sliced with sliced cucumbers as well!


We are reintroducing pasta. It's hard to have pasta meals when my husband is gluten free and basically hates Italian food.. But while visiting my husbands family (not italian), they served pasta every other night. I personally love it but Landon isn't really a fan... He does love spaghetti and meatballs tho! I served it with a toddler salad and homemade rolls..

Toddler Meals: take out




We often order take out for dinner. This is a quick lesson on how to order take out & make it "healthy" for your children.

Thai Food:
I love Thai food. Any Asian food is a favorite of Landon and I!  Landon loves seafood, so I ordered shrimp pad Thai, brown rice & egg rolls. Simple, easy and pretty heathy because he gets protein, carbs and vegetables. 

Flame Broiler:

Introducing pieces of meat: now that Landon is older, I try to incorporate meat 1-2x a day in his diet. I will often either carry my own scissors in his food bag or I will request a pair at a restaurant. 

But he loves steak & rice.. Loves it more with eggs & broccoli. I cut the pieces of meat super small so it's easy to eat and chew. 

I will also request at most restaurants to prepare our vegetables extra well done, then I can cut it up with scissors and mix it in his food.


Pho:

Pho (noodle soup) is a big thing in my home... Truth is, he will eat a bowl of soup over a sandwich any day.

When I prepare a bowl for Landon, I don't just give him noodles.. I make his bowl with everything!!! He eats pho with beef slices, noodles, chicken, bean sprouts, cilantro, green onions and sometimes, I'll add mix veggies. I also add 1 small drop of sirracha and hoisin sauce into the broth. He can eat this on repeat multiple times a week. I will often swap out noodles with brown rice. 


There you go, take out. When we eat at the restaurant, I always pack raisins, fruit, string cheese & crackers to take with me... I've also carried a container of cooked peas as well.
