Toddler Meals: take out

We often order take out for dinner. This is a quick lesson on how to order take out & make it "healthy" for your children.

Thai Food:
I love Thai food. Any Asian food is a favorite of Landon and I!  Landon loves seafood, so I ordered shrimp pad Thai, brown rice & egg rolls. Simple, easy and pretty heathy because he gets protein, carbs and vegetables.

Flame Broiler:

Introducing pieces of meat: now that Landon is older, I try to incorporate meat 1-2x a day in his diet. I will often either carry my own scissors in his food bag or I will request a pair at a restaurant.

But he loves steak & rice.. Loves it more with eggs & broccoli. I cut the pieces of meat super small so it's easy to eat and chew.

I will also request at most restaurants to prepare our vegetables extra well done, then I can cut it up with scissors and mix it in his food.

Pho:

Pho (noodle soup) is a big thing in my home... Truth is, he will eat a bowl of soup over a sandwich any day.

When I prepare a bowl for Landon, I don't just give him noodles.. I make his bowl with everything!!! He eats pho with beef slices, noodles, chicken, bean sprouts, cilantro, green onions and sometimes, I'll add mix veggies. I also add 1 small drop of sirracha and hoisin sauce into the broth. He can eat this on repeat multiple times a week. I will often swap out noodles with brown rice.

There you go, take out. When we eat at the restaurant, I always pack raisins, fruit, string cheese & crackers to take with me... I've also carried a container of cooked peas as well.

Bon Appitite!

Toddler Activities: Hammer & Nails

supplies: hammer is from a toy he received for Christmas but styrofoam was from the dollar store and the golf pins are from my husbands golf bag.
This is a great activity. It requires, hand/eye coordination, strength and concentration.
To hammer golf pins in, he has to first push the pins through the styrofoam. Then he has to hammer. Its actually a very tedious activity!

Learning how to use the hammer correctly was also difficult for him, but he got the hang of it quickly.

after he hammered, I taught him how to pull it out with the end of the hammer. He loved it!

Total weight gain/loss: Last appointment... I've gained 4lbs total. I'm guessing after this holiday I'm up 5lbs!

Maternity clothes? Yes, my leggings are taking over my life. I realize I'm wearing a lot of black. I swear I'm not emo! I'm just really loving black right now!

Stretch marks? No, but this dry weather is really drying me out.. Anytime I feel the slightest tingle I panic!

Sleep? I slept 9-6 the last 2 days!!!!! I'm so relieved!

Best moment this week: started feeling the baby more!! Also, I think we've picked a name!

Miss Anything?
My bed... My back & neck have been achy'

Movement: yes! I started feeling little kicks here & there!

2nd Baby Scaife Gender Reveal!!!!

Well looks like our predictions were spot on, all signs point to a baby girl!!!

After 2 separate ultrasounds by 2 different people.. Lots of running in place, coughing, jumping jacks, sneezing.. We were able to confirm that our sweet little loves is a girl!!

We were able to have a quick gender reveal for both sides of the family.. Both my sister and sil didn't want to wait.. They had to know right away!!!

My mom was the first to know since she was watching Landon. She didn't want to wait for my dad and she wore pink because she had a feeling...

Then we facetimed my Inlaws and had my sil pick up pink flowers and deliver them. They were so so excited!

My dad rushed home from work so we could reveal. He did call 2 times to check and see if we had results.

After the parents found out, we texted the siblings & nieces. We then sent out an email/text to aunts & uncles.. Waited for about 3 hours before we revealed via Instagram & Facebook.

We are beyond excited that our 2nd baby is a girl!!!

Next up, picking names & planning her nursery!

Toddler Activities: Marbles & Bottles

*** this is a project that needs to be monitored by a parent***

We introduced marbles a few months ago. you need a baking pan, marbles and an empty water bottle.

we count as he drops each marble into the bottle. I usually give him 10.

this is a great skill because he's picking up a hard rolling object and placing it into a bottle. It takes great hand/eye coordination + concentration!

Once he's done, I will say, "again" and he will dump his marbles and repeat.

and repeat. Keep an eye on your child, there have been moments where he goes to eat the marble. I will say, "not in your mouth."

Landon is 18 Months

It's official! I have a child who's 1 1/2. 6 more months and he will be 2.

Weight: 25.7 lbs, 32.5"... 1/2" shorter than last month... After 4 measurements from a few different people, they said he was incorrectly measured last month.

Health: He's doing great!   Last month I counted 6 teeth coming in but it was actually 8. 4 on the top have successfully come through and 4 on the bottom is almost In. He's very indifferent about his teeth.. A few fussy nights and back to normal.

Diet: still eating like he's a grown man!

Social: we had a 30 minute evaluation with our pediatrian. He watched Landon play, had a conversation with Landon then he was examined. Overall, our ped stated that Landon is very imaginative and plays very well. His communication and recognition skills are advanced. Sounds like an A+ in my book!

Crying: He cries when he's hurt, teething in the middle of the night.. Or when he is in the middle of something and we move forward when he's not ready.

LOVES: books, trains and his dogs.

Clothes: size 18 month & 24 month.. Shoes size 5.

This month, Landon is obsessed with house slippers. He spends a lot of time putting on shoes and walking about the house. It's such a great accomplishment for him. He can also dig through his sippy cup drawer and match his cups for about an hour. It's an obsession! He's getting really good with puzzles. He recognizes pig, cow, chicken, duck, horse, goat and barn. He can only say duck, moo and bock. We rotate his puzzles weekly.

What Landon wore

I've been slacking on my fashion posts...

I thought dressing a baby was fun, man- wait until they're toddlers. the clothes lasts so much longer! the only problem I have with dressing this kid is- he gets so messy when he eats.

We got his shirt & pants at old navy (winter 2013). I love old navy! its affordable, the quality is just as good at the Gap and its durable. His shoes are from Zara. I'm trying to really wear them in because his feet is growing so fast!

Toddler Activities: Cutting Fruit

We purchased these plastic fruits at target. I like it because it cuts in half and velcro's back together. Landon sometimes "grunts" when he wants to open the fruit, after the 7,893rd squawk, i pulled out the play knives and showed him how to cut.

Every time we "cut" the fruit, I would say "CUT" he would repeat.

And that was that. cutting fruit. It's been months and he walks around cutting our legs, cutting the table, cutting his puzzles.. Every time he goes to cut, he will say, "CUT". lol.

Toddler Meals: keeping things simple

Ok... easy meals.. There are days we attempt to make life easy by cracking open a box of Mac & cheese, slap sandwiches together or make our meals from scratch.. Here are some simple options:

Boxed meals

Landon is not picky about much, but he isn't a fan of mashed potatoes or Mac & cheese. I've tried introducing it in 6 different ways, but I think it's the sauce that makes him cranky... It doesn't stop me from trying it over & over again..

Mac & cheese, hamburger style is my favorite thing!!! I added mushrooms and onions as well.. He did end up eating it once I added spaghetti sauce, but I mainly served it so he could "try". I ate most of it! Delicious! I always introduce a Variety of sides, cheese, raisins and different fruits.. We will often eat the same type of fruit 2-3x a week.. Since he gets large servings of fruit at least 2-3x a day, I make sure he gets vegetables at least 1x... But when I can, (at least every other morning), I'll make veggie omelets.

Homemade

this one is a pretty easy one. We usually always have rice on hand.. I also have chicken broth in 6oz boxes. I heat soup with rice & veggies for 30 minutes on low. This is a Great meal on cold days. I serve soup at room temperature and he loves it!

Baked meals:

I often use a conventional oven to make easy meals.. Naan bread is amazing because it's ready made.. Making pizza only takes about 10 minutes @ 350•. We use organic spaghetti sauce with mushrooms, meatballs, pepperoni and bell peppers.. We are also practicing "nut eating" with Landon's teeth coming in, we love chopping up nuts so he can practice chewing. We also make sure it's salt less nuts.

Sandwiches
we are not huge sandwich eaters... I actually freeze a loaf of bread once i purchase because it takes us about a few months to finish it. But as an easy meal, I will encourage him to have a sandwiches... He will eat everything before he touches his sandwich.

Hope you guys like them! Bon appetite!

Christmas Pajama Link-Up Party!

I'm so excited to post about our holiday jammies! I bought these at baby gap in june for $2.99. They're the only pair of footed zip up jammies he owns but they're adorable!

We got this fleece blanket at old navy. Its very warm and he loves snuggling up while we read books!

We also decked out his room in santa bedding from Pottery Barn Kids. He will use it every year for the next few years! SOOOoOoOoOo cute!

It was also the first time we introduced a pillow and he loves it! He now likes us to tuck him in and say, "good night buddy!"

HO HO HO! Merry Christmas!
